I've read about some "hybrid" panels using both poly and mono elements, to use the best of both worlds.
Since I live in Texas, we have two seasons. The first season is "completely unknown" weather, be it sun, rain, snow, sleet, or ice storms. The second season is low winds, hot and humid. For the summer, mono panels would be optimal because of the unobstructed sun. However, come wacky weather time, poly is better overall.
As for an A/C, this is one of the first times I've heard about someone running one with just solar. Like above, this might become a plan "B" with the state of world affairs going on as we know it right now.
