Actually today's Over-The-Air television is all digital (without getting into technicalities).
There are many things that can cause "drop outs" when recording OTA signals. The USB interface is not "optimal" for this type of data collection (USB is not a true "stream" so the "box" has to buffer some data before transferring it). The speed of the processor in the "box" and how much memory it has makes a big difference. Better quality "capture boxes" have faster processors and more memory.
