On roasts with my Trager,I used alder and mesquite mostly. One thing you'll find with a pellet bbq is that when it's cold you'll need to have the thermal blanket and you do lose at lot of heat when you open it up to check your cooking and it takes time to get the heat back up. That's why you usually start it on high and then turn it down after you put your food on.
