Yes all battery -ve can be (should be) connected to the frame along with the 120v ground. Very little losses using the frame as a conductor. If your oem wiring has a -ve cable to the power center that is fine also. You can connect the 2x GC2 in the same way. Check but I am fairly certain the -ve will be connected to the RV frame at the power center. Look for a 12v -ve ground bus.
Generally fuses and switches are only on the positive side. Each set of batteries should have a main fuse to protect the wire. This fuse should be withing 18" of the positive terminal. Closer is better.
