I am considering buying a 5th wheel that has two air conditioning units with 50 amp service. The location where it will be placed permanently only has 30 AMP service, so I will not be able to run bo...

A true 50 amp service, NO - the reason being that so-called 50 amp RV service is actually 100 amp service - i.e. 50 amps across each of 2 legs. With an adapter with one leg pulling from 30 amp service and the second leg pulling from 15 amp service your total draw will be limited to 45 amps, not 100 amps.
