We bought a Lux Geo wireless thermostat and wired it in to our park model - it connects to any wireless. You could use a Mifi but I have no idea how much data it would use.
Thermostat is remotely controllable so we can turn up/down heat/AC.
I like Gordon's idea too.
But if you're that worried, maybe turn on the AC to whatever temp your dog's comfortable at and leave it?
