I have a large level that I can see in the rear view mirror. I glued and screwed 3 pieces of 2x6 about a foot long together. I cut the block diagonally so the edges were showing on an angle. Put one in front or back of each tire on the low side and move trailer until level. I then place rubber wedges that I have on the opposite side of the tires.
If I make another set I'll use 4 pieces of 2x8 for a bit more lift and tire contact surface. A eye bolt in the end with a bit of rope and a PVC handle make it easy to retrieve.
