So next we drive to North Rim and camp at 8800' elevation. Night was nice, but in the morning just for the test I started generator, used coffee espresso and then tried my AC on Eco mode.

Now proceed with the REAL test.
Try running the AC (and all the other parasitic loads) at 8800 feet at +100 degrees F in the afternoon/evening when you really need it. You may get the AC to start but my bet is that you'll be doing constant load management to KEEP it running reliably. That's not something I'm interested in doing all day long but, . . . YMMV.
