Maybe I'm missing something about this project but R-12 for insulation of food storage space in Mexico doesn't seem right. I would assume that 4" of extruded foam or better would be the starting point. That would be in the neighborhood of R-20 or more. ISTR, a project in the Upper Midwest for freezer space was spec'd for 8" of foam by the builder to maintain freezer temps. He was also looking to achieve some energy savings.
