We always travel with a full or nearly full fresh water tank. If you are having to save weight, you are too close to the limits already.
300 lbs is actually a lot. I don't carry nearly that much food and camping stuff in the trailer.
Advantages of on-board water: enough pressure as long as it works.
Disadvantages: it is heavy on the road, it is loud to use, and sometimes it stops working - and then you have to find a leak and fix it.
Humans need 1 gallon of potable water a day, this isn't much and doesn't usually come from fresh water tank.
What I have marked in red is true whether you are on city water or the water tank. A leak in the trailer is a leak, no matter what the source of the water is.
Both "heavy" and "loud" are subjective. It is neither too heavy nor too loud for DW and me, but YMMV.
