Simulating shade by covering up parts of the panel is not realistic. If the shaded cells still produce power then the bypass diodes will not conduct. Now the series string is limited by the least producing cells. Bypass diodes probably work when the shade is "hard", meaning the shading object is in close proximity.
Here's a test that shows parallel is better. Direct one panel towards the sun and the other panel 45 degrees away. The parallel configuration will provide more current.

The shading issues with panels in parallel or series is dependent upon bypass diode implementation in and amongst the panels.
