We have a Norcold 611 in our 2005 motorhome and it still works great.
We usually leave it's cold switch to "3" on RV trips. This setting winds up over time of maintaining the refrigerator at around 37 degrees and the freezer around 10 degrees.
The recommended temperatures for refrigerators is 0 degrees for the freezer section and 38 degrees for the refrigerator section.
For us, a 10 degree freezer keeps ice cream perfect. A 0 degree freezer keeps ice cream too hard for immediate enjoyment ... which is exactly what happens in our home refrigerator that precisely maintains 0 and 38 degrees in it's two sections.
I'm not at all sure that a higher switch setting "speeds up" the cooling process. It makes most sense to me that a higher switch setting only changes the target temperatures that you want the unit to hit and stay at.
