If the switch is accessible, you should be able to disconnect it at its connector. If this doesn't alter the dinging and the brake light, it's presumably necessary to short out the connections (assuming there's only two of them). This, of course, means that you don't have the reminder should you attempt to drive off with the brake engaged, but I guess that's already the case anyhow.
As Johno02 said, double-check that the parking brake is fully and completely disengaged. I sometimes have to give the parking brake lever a little upward shove to get the switch to admit it's disengaged on my (Ford-based) class C; the spring doesn't always quite get it up the last millimeter of travel.
