IF you can find a 370A alternator that fits your vehicle, then what you are describing is possible...
DC Power Inc. is a highly regarded alternator manufacturer that offers alternators up to ~370A (max) with a hot idle output of ~190A.
I have a 180A alternator from DC Power in my Ram. I have seen idle current as high as 90A to the camper. I use it to operate my fridge (via the inverter) while on the road. I suppose that I could run the A/C while driving (would be ~100A @14Vdc), but I have not tried it. I'll add that I have 2ga wire running directly from the alternator to the camper battery bank.
That said, I can't imagine any situation where I would choose to idle my truck for an extended period of time (I even have a high-idle setting) just to run the A/C. My 2000W Honda generator is better suited for that purpose (low cost of operation, excellent fuel efficiency, quiet, low maintenance).
