Hi Seraphim,
You could investigate one of the three "boost" inverters that will supplement the generator output when the air cycles on. The most recent is the Magnum 3000 watt but Victron and one other maker also have such units.
I would treat solar as an "add on" that charges the "house" battery bank.
Putting the bank on the bed of the truck would mean using fairly beefy connectors of some kinds.
