I think I would set my panels for the most probable latitude I would be camping at. it would also depend on what I was planning on running on my panels, more summer stuff or more winter stuff. if all of my camping was south of the mason dixon line, I would set my panels accordingly. but don't they make adjustable mounts anyway?
