If the ceiling construction is like my lightweight, there is a layer of foam (about 1 1/2" thick in my case) between a thin lauan roof layer and a thin lauan ceiling layer. The inner ceiling layer (probably less than 3/32" thick) might have delaminated from the foam and is sagging down. This could happen even without water intrusion.
Can you see if the roof is also sagging down in the area where the ceiling is sagging?
Just a thought on a possibility.
