Wrapping the threads in teflon tape won't interfere with the way the anode rod works, because it will shred and there will still be metal to metal contact. I use anti-seize, but teflon tape works well. Teflon tape will make it seal a bit better, and anti-seize will help insure you can get the darned thing out again. :)
