    Thanks to everyone that replied!

     I found the transfer switch and have bypassed it by putting a 30 amp female end plug in coming from the generator into the shore power storage area.

     Now to use the generator I just have to plug in the shore power to that plug in when I want to use the generator.  This is how many other RVs are set up that I have seen and I prefer it that way because of simplicity and less electronics to have to rely on.

    The transfer switch was on top of the power converter.  I couldn’t see this until I removed the drawers above it.  I never did that until your suggestions because I could see the back of the power converter from under the sink but the switch was hidden from the back.

You're right that there should be a transfer switch. Maybe try looking in any cabinet doors or pull out the drawers inside the coach but behind the generator. See if there is a panel behind a drawer that is screwed into the wall what might be hiding the transfer switch. 

Thinking further. You know where the breaker box is. On my trailer (different layout) I can remove the drawer just above the breakers and see into the cabinet behind. If you have something like that maybe you can trace the wires from there.
