Must be complicated in a slide-in camper sized rig, with the galley tank quite small. Our 5er has a galley tank that is half the size of the other tanks, so it always fills first unless we take steps. An even smaller tank would be even more annoying.
Taking those steps is a PITA (wash dishes in a sink insert, dump the insert into one of the other tanks eg), but yes must be even worse with rigs that have two sani dump terminals.
Some people do some plumbing to get around that so the two grey tanks share. It depends on your camping lifestyle which tank fills first and what you are willing to do about it.
BTW the galley tank monitor is likely to give false readings of being more full than it is, due to food etc getting on the sensors. You can get a true reading from when the water won't go down the sink drain anymore :) If it is a PITA do dump that tank when the others don't need it, ignore the monitor until the sink backs up so you don't do extra work not needed yet.
