If you didn't have the res fridge you could boondock for a week on six batts and use the MW all you want.
Two summers ago, we had five batts and only 80w of solar and lasted 6 days before needing to haul out the generator and catch up at 50% SOC. During that time we did the usual AH usage including lots of MW, toaster , kettle, on the 2000w inverter.
It is just incredible how much trouble that res fridge ( vs the usual propane) is causing you. Mr Wiz has a smaller res fridge, 505w of solar, dozens of batts, and still needs to run his gen twice a day. (but he is full-timing, and has it all organized)
You could arrange to be at 50% by the end of your week off-grid and recharge to 100% on shore power when you get home. This would save you a bunch of solar at least. Throw a bag of ice cubes into the fridge every day or something! Yipes.
