I have no problem averaging 19 to over 20 mpg hwy w/ my '08 5.3/3.73 4wd @ 70+ mph in east TN hills. Using EPA's test cycle, the 5.3 returns 3 mpg better than the 6.2, both highway and city. They will be ~ the same when towing, and folks w/ a heavy foot probably won't notice any difference. Comparing pre-2007 5.3 motors doesn't count, since those don't have AFM.
That said, I haven't heard many complaints w/ the GM 6.2L in 1500 trucks. I wouldn't mind having one myself :)
