DH and I have been RVing for over 40 years, and have done it all, from a pop up to a Travel Trailer to a Class C and now our Class A motorhome. If it is only 2 of you - not sure if you answered that or not - don't think you need 29' TT. A 22-24' travel trailer with the right layout should work well enough, with slides on both sides (although most TT do not have opposing slides, generally one for the bedroom and one for the living/kitchen area). The smaller the rig, the lighter it will be which matters if you plan on doing any kind of driving in the mountains! Space in almost any RV for 2 to cook in the same kitchen at the same time is unusual as well. Would suggest you seek a real walk-around bed. Much easier to make and better for late-nite bathroom visits!!
What has always been most important to us is accessible storage areas (inside and out) and ease of use. You will want an electric jack and power levelers. Trust me, that is so much easier than cranking everything! When you do decide on what to buy, a very strong suggestion (learned this by NOT doing it too many times): Take your time going over how to do everything with the salesman when you pick it up! Don't hesitate to ask many, many, many questions! Be sure you can follow every step he shows you. The last time, I finally took videos! There is no way you will remember every step to every part of either setting up or taking down your RV. Finally, can't help you on how to match your truck to the right RV - that's always been my husband's area of expertise. It looks like you have gotten good information there anyway.
