Well ours is just a lowly Laramie but we love it none the less. It still has most of the features that the higher models do with the biggest exception being the fancy seats. And it fit my budget much better!
I think if I was going to choose a higher trim level I would go with the Limited just because I like the colors and trim better. Just personal preference I guess.
And as for the leather seats being hot, the cooled seat function takes really good care of that! :B
