It is hard to believe, but my experience is that towed weight doesn't make much of a difference in MPG. Since we got a new boat, I no longer tow it tandem behind my 5er, instead we now take two vehicles. Traveling the same speed on the interstates (65 - 70), there has been little to no change in my trucks MPG. And my old boat weighed 5000 pounds.
