I have the same truck and the same problems. In fact I've had to replace the motor at 95K. Regardless, I think the oil level rises because of the diesel in the exhaust stroke for the DPF rather than the coolant. You really have to baby these trucks and do the DPF delete, and get rid of the EGR to get any real miles out of them. Sad Ford let's us pay for their bad engineering...
To the oil level rising one of the best investments you can make is having your oil analyzed at each change!
This will let you know if you have fuel or antifreeze in the oil.

I hear ya on the oil analysis. Isn't it sad that with the money we all spend on thes units, that the consumer has to spend that much more money outside of required maintenance to keep them running. I've been trying to post the hotline assistance Request from the mechanic to Ford, but am having a hard time getting it to send. That should answer some of your questions.
