One more thought on the dining plan. We have used it and like it. One lesson learned is that many (most) of the restaurants will be reserved well in advance for popular meal times. If you go with the dining plan, then take the time to decide which theme park you want to be in for each day of your trip. Then, make a sit down meal reservation right away. Six months ahead is not too early to start planning. Some places, like Cinderella's Castle, often are full on the first day you can make reservations. On our first trip to Disney, we ended up eating quick service, think fast food, for every meal because all of the restaurants were full.
Consider when planning your park days if you want to use extra magic hours - which are great but tend to fill the parks on those days. Also consider if you plan to park hop. We sometimes split days between Epcot and Hollywood Studios.
Once you know which parks you will be in, then you can decide if you want a big lunch or supper and can make reservations accordingly. The MyDisneyExperience app is a pretty good tool. You can filter by location, food type, and time to help see what is available.
Another really good resource that hasn't been mentioned yet is the DisBoards. They have a forum specific to the Fort along with Forums for just about every other question you are likely to have.
