Is there a big difference in MPG going to an A/T vs a hiway tire. I assume there is some, and 20-25 miles per tank would be reasonable....I certainly do not want to drop my MPG by 2-4 mpg....ugh!
Has anyone towed with these tires? Reviews I have read say that they are pretty stable towing but you guys are the experts...
I don't do a lot of off road stuff, but my current Firestones got stuck in my back yard when I was unloading wood pellets...had to go into 4wd to get to the front yard!!

Are you rotating your tires regularly or running under inflated? You should be getting a lot more miles out of a highway tire like that.
As for loosing MPG I dumped my factory 265/60/20 Goodyear SRA highway tires (crap) for larger more agressive 305/55/20 Mickey Thompson ATZs and lost a good 1-1.5MPG. I need the traction because I pull my 5er through the sand a lot Compared to most other ATs they are very agressive and the wider tire size added a lot of rotating mass. Its a combination of tread pattern and tire weight that are going to eat into mileage. The benefit of going to a larger tire is that you don't have to run crazy high PSI when empty like you do with the stock tires so ride improves tremendously. I run these at 45-50PSI empty whereas I was 60-65PSI with the stock tires.
