You have dozens of options for a day trip for a couple of days from Brighton.
You can easily go to Estes Park and Rocky Mountain Nationsl Park area,just West of Loveland for a day and night or two. From Brighton it is not far to Fort Collins where you can take Colo Highway 14 up the Pouder Canyon where there are about a dozen camp grounds along the river.
You can also take I-70 West from Denver to Dillon-Silverthorn area, or take US 40 to Granby, Grand Lake area, and even on to Steamboat Springs area. There are more camping places in all of the mountains just West of you then you can visit in a couple of years.
