A couple of ways. You can use the Advanced Form, and there is an icon, click on it and a window pops up.

Or, you can just learn the combination of symbols and type them in.
Then you can make up your own, but they don't always show up as a Smilie, but an emoticon still works just fine. :O
But then sometimes you don't get what you intended!
