There is a lot of confusion out there, and a lot of people love their full sized trucks and think nothing else is suitable and tow ratings are the point at which the wheels fall off. ; -) The reality is more complex, and for a mid sized SUV like this they tend to be very conservative marketing numbers trying to up-sell you to a full sized truck. That Explorer in most ways is a better tow vehicle than the old ones, that were rated at 7,200# - for reference.
The Explorer is likely fine for that trailer, I've seen several trailers in that class being towed fine with the new Explorers. Just make sure you have a WD hitch and you do need sway control due to the poor overhang ratio. That trailer has a large fresh water tank and a decently high dry hitch weight, the water tank may be located forward. 60 gallons weighs a lot, probably best to only travel with it full when you really need to.
