I've pulled a 24' trailer that maxed out my tow vehicle, a 38' 5th wheel that was just within the capacities of my tow vehicle, and a travel trailer (28') that was grossly under the capacities of my tow vehicle.
The most enjoyable experience I had towing was when the tow vehicle was way beyond the requirements to tow the trailer.
It's always a personal decision, but if you really want to enjoy your camping, I'd go with a stout truck. If it were me, I'd get the F350 or GM 3500 SRW...that way if you like RV'ng and want a bigger trailer, you have room to move up and you'll NEVER have the angst about not having enough truck.
What I found when I had a barely adequate tow vehicle was that I'd go camping less frequently just because (consciously or otherwise), I didn't look forward to the towing experience.
