OP, sounds like you are doing your homework. I feel your pain, as we also have struggled to find a suitable combo for 6 people. Not a lot of options out there.
My opinion, obviously, but there is no legitimate reason to stick at 75% of the truck's ratings. The truck is rated to do a certain job, and there is no reason not to expect it to do so. Most on here and in the 'real world' are operating at their vehicle's rated limits and doing so safely and without any problems.
The EB Expedition should be a great tow vehicle. I love how my EB F150 tows, and love how the engine performs even when not towing. That will probably be our next family vehicle.
