Dogmuffins, while it sounds like an ambitious effort and venture, what you're proposing is a tough shed on the back of a truck.
This is not a great idea for many reasons. Like a lot of reasons.
Buying an old uhaul or other box truck would accomplish exactly what you're planning except with a better "box". Then try your skills at outfitting it.
