We've gone through three seasons dropping (no, not like the unfortunate op) our 1140 without any problems. I use four of the stackable jacks and 12" 2x4s at the corners more for added stability than to share the load. We've had no issues. For winter storage I use the three stacks of 2x6s as mentioned by the OP and in the owner's manual. I've read the manual cover to cover and don't recall any prohibition of using the camper while on the jacks. I guess I'll read it again.
Your 1140 has an aluminum superstructure, our 2003 1150 has wood. Not sure if this makes a difference or not.
I think having something along that can support the floor is smart, if something breaks on the truck you can separate the two for repairs and still live in the camper. I'm also planning some semi-remote mission team support this summer, and will be using my camper as a basecamp cabin/kitchen to support the teams with food. I'll be wanting to use my truck for running supplies, getting gravel, etc. to support the construction site. The base setup I have now for winter involves 3 lawn timbers, 12 cinder blocks and multiple shims for leveling (I use the yellow leggos I got 50% off, haven't broke one yet). Too much to bring along on the road.
