This is true..but was kind of...pardon the pun...an overblown issue.
The failure is repaired for a few hundred bucks...cost about the same as swapping a single injector on the 7.3.
OP...I owned a V10 F350 and can attest that that motor is stout it will just have to rev. It out performed stock 7.3's and was a better motor than the 6.0...so...imho...the V10 had a leg up on both the 7.3 and the 6.0. It will get 8 ish mpg towing and 9-13 MPG ish empty depending on conditions and your driving style.
