I have a 2000 Ex with a V10 and 4:30 gears. In the steep mountains of WVa plan on 4 mpg and second gear. Regular towing I get 7-9mpg towing a 36 ft with weight of 10200 lbs loaded plus full vehicle (2 adults...big dog...golf clubs 20lb propane tank etc. In the early years the v10 actually had more HP and torque then the 7.3 but you need to let it rev. We just returned from Myrtle Beach a week ago and I would estimate about 60% of the trip was in OD. I have 92000 miles on the Ex and no issues other then maint items. Do not let some tell you you need to add this or that to make it tow right. Mine is stock and tows great....rock solid. As for the spark plug issue....it was not the best design of the plug seats but was mostly caused by improper plug installation. Only real weak point of the v10 or any ford modular motor is the ign coils. I keep spare and a 6mm socket setup just in case and the coils are 8 bucks now on ebay and every bit as good as factory.
