Can someone kindly explain this theory - I have an '08 CD and no DEF and I am not quite sure what the fluid does - assuming it add's a higher burn in the DPF?

DEF is just Urea and water. When used with an SCR (Selective Catalytic Reduction) will reduce NOX coming out of the tail pipe. By using DEF the engine makers can use less EGR (Exhaust Gas Recirculation) and tune the engine where there is less soot made.
DPF only filters soot. That is it's only job. SCR and DEF takes care of NOX. Together there is almost no bad stuff coming out of the pipe.
