You mentioned you had a two inch high flame and the cooling still isn't right, I don't ever remember seeing a two inch flame on my the burner and my unit stays below 32 without a problem.
Remember gas is way more efficient than the electric side so if your fridge works on electric the system is fine there are no leaks.
The only thing you MUST check is the flue stack, either its choked with carbon or the baffle is rotted away.
