I'd stick with the Ram 6.4L over 5.7L. The owners of prior 5.7L who upgrade all say more power and better fuel economy. Expect discounts of at least $10k off MSRP of any new truck.
The Toyota 5.7L with 4.30 axle is similar in power to Ram 5.7L and Ford's 6.2L. The trans gearing of Tundra with 4.30 is almost identical to Ford/GM 6-spd with 3.73, in trucks that weight 500-1000 pounds more than your Tundra. So you might want the shorter ratio in the HD just to have similar acceleration.
