I too converted all my lights over to LED. Then I added 2 deep cycle golf cart batteries to the front of my TT. I'm just a weekend camper and I've found I can go for 4 days without charging the batteries. I don't know if they would go longer then that because I need to go back to work after that.
Another thing you can do is cut back or eliminate on some of the parasitic draws. Like you said you need to keep the circuit board on your refrigerator and water heater going. But, if you have a newer unit with a digital radio they have a memory in them that is using electricity all the time. By unhooking the wire to the memory portion of your radio you can save a little there. If you have a built in propane/carbon monoxide/smoke detector you can replace those with external dry cell battery operated units and save some power there too. Please do not unhook them without replacing them.
