#1. What is the rear end ration 4.10 ? 3.73 ? A Hemi with either should be powerful enough but it's not going to haul things up mountains like a diesel .
#2. I think you said a 'wet camper' rolling down the road weight of 2500# is your hope.
LB or SB truck ? Well....I'm not sure about finding a camper that light in a hardside LB model .
It will have to be a non slide unit .
If you have a LB truck ... a SB camper which WILL fit on a LB truck. The mfg. adds the extra bed length in front of the rear axle . The COG in regard to the trucks axle will be in the same place when the camper slides into place and you could build a storage box between the truck cab and camper to carry some gear (weight) on the front axle. It would also act as a 'stop' for the camper.
If you have a LB or SB truck , here is one possible unit that might work for you.
Even the NS Liberty at a dry 1800# is going to put it at or over the 2500# mark. Off the top of my head, its the only example I can think of right now.

Things to do to help with weight : Keeping it down to one battery, one propane tank, very little water, empty holding tanks and carry only the necessary things you really need. Maybe use the boat to carry some stuff,let the boat trailer axle carry it .
