Often the recommendation is to go down in the same gear you went up....IME you need to go down 1 or 2 gears lower than you came up, often in 1st.
Brake hard if necessary, then let off. Never ever ride your brakes.
Works on long grades and hairpin turns. Hairpin turns may be best done in 1st gear to minimize braking.
