Kinda my thoughts, and honestly it would be the best case scenario in my mind. Diesel truck (with DEF) sitting for 2 years would worry me. Engine gaskets dry out, tires rot, rust occurs in bad places, DEF goes bad, etc. If it was a demo truck (probably management if its a higher end trim), that means it has been driven on occasion and likely in better mechanical shape, it will sell/title as NEW, starting the warranty NOW, and it will sell at more of a used price.
I'd be REALLY interested if it were a demo and properly maintained. I'd be a little more hesitant if its been sitting for more than a year.
