Heres a video, these are Atwood but all similar. Bout half way at minute 9: is where it shows dually bracket, again at 11:30.

Basically you just swing out or in.
When loaded on truck they would be in travel position-swung close to truck, they will drop into slots to stay in that position. TO swing out- lift up on jack to pull out of slots then rotate outward. (do both sides). Then lowere jacks, As jack is lowered it will raise into matching slots to stay in out position for off loading. Ensure slots are aligned and will lock or interface before lifting. When off loading on truck would be opposite, once under camper raise jacks, the jack will (should) fall out of slot, swing over toward truck to lock, dropping into slots. Either getting in or of slots may require a bit of wiggling jacks.
edit-DONT put your finger in/near the slot as shown in video-it would hurt? a lot.
