I ended up pulling the oven since I couldn't see well enough to locate the leak let alone have a chance to reach whatever needed fixing. The leak is definitely coming from the city water area. I'm just going to replace everything between the city adapter to the pex since I can't be sure where the leak actually is.
Once I get it back together, I plan on air pressure testing to 40-42psi since my pump provides 38. Assuming no leak, I'll bleach the wet areas and reassemble. Working in the cabinets is SO much easier without the oven!
