I would urge you to thoroughly understand the various weights associated with your set up, especially as it sounds like you are expecting to be over your payload limit. You want to have an accurate tongue weight figure and understand how loading of the trailer affects that. And you want to know that your weight distribution is working as expected and you are getting the proper load restoration.
You don't want to make assumptions - you can be well under all your limits and still have problems. Scaling your truck and trailer will provide you with an accurate baseline so you know what all your critical weights are and you can then make informed decisions.
