jj95-- how is this for a strange coincidence? I just sat through a 40 hour state mandated training course for my insurance adjuster license!
Here is what I would recommend: (legal rear-end covering first: I am NOT a licensed adjuster yet and you should consult with professionals in your state for exact rules/regulations)
Go to your internet search engine of choice and search for Public Adjuster and/or Certified Insurance Consultant in your area. Insurance companies hire adjusters who represent their interests. You have a legal right to a Public Adjuster (your policy may even cover there expense)who will represent your interest. Once you retain a Public Adjuster USAA will only speak with them. Public Adjusters working in conjunction with the inhouse adjuster can quite often "bind" coverage and find coverage where it may have been hiding.
Insurance Consultants are NOT adjusters but they have received more training and passed more rigorous tests than agents. They can review your policy and the Facts of Loss and advise you if probable coverage exist. Some policies cover Consultants and some do not. Either way, an inhouse adjuster is NOT the final word. You have rights afforded to you by your policy. Read it!!!!
