I understand completely if you are reluctant to reveal your secrets -- you are a professional, and each profession has to have its own techniques that are not available to the amateurs.

Dan, while Steve drives I point the Canon G12 out the window in various directions and push the shutter button. That little camera is amazing at capturing good shots while we move down the road.
When we're stopped, maybe hiking or sightseeing, I use a Canon 7D DSLR usually with a 24-105mm Canon lens. Sometimes switch to the 10-22mm wide angle for landscape. For getting close-up and personal with wildlife I usually use the Canon 100-400mm lens.
I have a polarizer but rarely use it. Even though it is a quality one I don't like how it can reduce the sharpness of an image. So only pull it out when shooting on/through water, but even then, rarely!
