I don't presently own a truck camper but back in their heydays ('60s-'early '80s) I've owned a 8'...and a 9' 6".....and a 10' 6" truck campers. I had various 3/4.....one ton DRW and SRW trucks and kept a scale ticket of axle weights in the glove box on each truck.
Trucks back then didn't have tire placard payload stickers and carried weight determined by the trucks GAWRs with special attention to the trucks RAWR as its carrying just about all the TC weight depending on cab selections/wheelbases/etc.
Your 2800 lb number sounds like a estimate as actual scale weights come in 20 lb increments ie; 2820...2840....2860/etc. Your truck may have more payload than you think.
Looking at your '01 F350 long bed super duty 7.3 diesel truck in your profile may be a SRW at 6830 rawr....or a DRW at 8250 rawr.
The '01 F350 srw can weigh in the 2900-3000 lb range on the rear axle leaving the truck with around 3800 lbs for a payload in the bed.
The same year model DRW may weigh in the 3200-3300 lbs range on the rear axle leaving around 4800-4900 lb payload in the bed.
Actual axle weights tells you the payload story.
As was mentioned many folks with a 3/4 and one ton srw trucks move up to 19.5" tires and wheels along with rear suspension help to carry more load.
